The Clos du Cellier aux Moines is one of Givry’s most storied vineyards, a walled, south-facing parcel first cultivated by Cistercian monks from the Abbey of La Fert in the 12th century. Baron Thnard, better known as the historic owner of a sizeable holding in Le Montrachet, farms several hectares mid-slope here. This is serious red Burgundy from the Cte Chalonnaise, a Pinot Noir with structure, dark-fruited depth, and the kind of mineral spine the limestone walls of the clos have been delivering for nearly nine centuries. Drink it now with food or hold it a few years.
