Moon Calendar is Aslan’s read on the style, and it’s the modern version: dry, resinous, properly bitter, all pine and grapefruit peel instead of sticky sweetness. At 6.5% it has the backbone the style demands without tipping into hot. Aslan brews certified organic up in Bellingham, Washington, and there’s a clarity here in the glass and on the palate that suggests people sweating the details. Drink it cold and drink it fresh; IPA is a perishable good and this one rewards impatience.
