Alipus San Luis Del Rio is a mezcal produced in the region of San Luis Del Rio, Oaxaca, Mexico. It is made from agave Espadin plants that are roasted in underground pits, mashed by hand, fermented in wooden vats, and distilled twice in copper stills. The resulting mezcal is complex, with notes of smoke, roasted agave, citrus, and pepper. It has a smooth finish with a slight fruity sweetness.
