Alipus San Baltazar Mezcal Artesanal Joven Espadin is a handcrafted mezcal made from 100% Espadin agave. It is produced in the small village of San Baltazar Guelavila, located in the Oaxacan highlands. The agave is cooked in an underground oven for three days and then crushed with a horse-drawn tahona. The juice is then fermented in open-air wooden vats and double distilled in copper stills. The result is a smooth and smoky mezcal with notes of cooked agave, citrus, and herbs.
