It is produced using traditional methods, including roasting the agave hearts in an underground pit oven, crushing them with a stone tahona wheel, fermenting with wild yeast, and distilling in copper pot stills. The resulting mezcal is smooth, smoky, and complex, with notes of roasted agave, citrus, and earthy minerals.
