Venus is named for the draft horse that plows it a single 0.3-hectare parcel of 1959-planted Chardonnay in Avize called La Fosse, worked by hoof instead of tractor. Pascal Agrapart calls this the crux of the village, where the hill’s pure chalk and heavier clay meet in one plot, giving a Champagne with both cut and real depth. Fermented with native yeasts in seasoned oak and bottled bone-dry with zero dosage, it’s often held up as the ultimate expression of Avize. Old-vine, horse-farmed, single-parcel grower Champagne about as serious as Blanc de Blancs gets.
